You may have often heard that breakfast is the most important meal of the day. The first meal after a good night's sleep (or...just a late night of Netflix n crashing ) kickstarts your metabolism which means that you burn more calories throughout the day.

So, if all your good intentions for starting your day on a delicious note in the PM die in the AM, here's some motivation. "On the go smoothies, pre-planned breakfast meals, superfood laddoos, home-made protein shakes, berry smoothies, bread and eggs, cereals, muesli, dry fruits, flax seeds balls are the best ways to avoid giving breakfast a miss. I suggest planning breakfast the night prior, keeping nuts and seeds in the car to avoid long meal breaks," she says. 

So, here are some of her MVP recipes in the breakfast menu that you can totally whip up at home too!

Spinach & Feta Egg Muffins

1 cup baby spinach

1/4 cup Sharp Cheddar cheese

1/4 cup fetta

Add bacon/ ham

6 eggs whisked with salt, pepper & mustard powder

Take a muffin tray and butter it for more flavour. Now, start layering your ingredients. Start with spinach in the bottom, crumbled feta and whisked eggs. Repeat this until 3/4th of the tray is filled. Now, bake for 160 degrees for 15-20 minutes until the muffins are done. Serve with sourdough bread with a cream cheese rub!

Winter Warm Sprouts Bites

1 cup sprouts

1 tsp salt

1/2 tap pepper

Handful basil

2 tbsp rice flour, if needed to bind

Handful fresh chopped coriander

1/4 cup finely chopped red pepper

1/4 cup pumpkin seeds

In a small blender coarse grind the sprouts. Transfer in a bowl and add your seasoning, pumpkin seeds and the chopped red pepper. In a pan, heat some olive oil. Scoop out of one spoon of the sprout mixture and flatten it to resemble a fritter. Fry it in the pan, flipping until both sides are golden brown. Enjoy this healthy, nourishing recipe!
