Rushed mornings can easily throw off your entire day, leaving you feeling less than your productive best. Between Zoom catch-up calls, that Pilates class, cold plunge appointments, and gua sha massages, the last thing you want to do is be stuck in the kitchen for hours preparing a meal. Now nutrient-rich foods are important to get you going, but that doesn't mean you spend hours preparing them. That's why we've curated three quick and wholesome recipes that deliver maximum nourishment with minimal time and effort.

Dill and cucumber soup

 

Ingredients 

3 tbsp dill leaves (chopped), 1 tsp vinegar, 3 cucumbers (roughly chopped), 1 cup plain homemade yoghurt,1/4 cup lemon juice, 1/4 cup mint leaves, 2 tbsp chives (roughly chopped), 2 tbsp extra virgin olive oil, Salt to taste

Method

Ready to make the easiest soup ever? Toss everything into your blender - yes, everything at once! Blend until it's silky smooth, then pour into bowls or takeaway tumblers if you're on the move. Pop it in the fridge to chill out for a bit. When you're ready to serve, crown it with some crunchy croutons and a drizzle of olive oil for that gourmet touch. It's everything you need in a summer recipe- cool, refreshing, and requires zero stove time!

Heirloom tomato, basil, and feta salad

Ingredients 

10 slices heirloom tomato, 1 cup cucumber (thickly sliced), 1/2 cup feta cheese (crumbled), Juice of 1/2 lemon, 1 tbsp olive oil, 1 tsp fresh basil (finely chopped), Sea salt and pepper for seasoning

Method

First, let's whip up a zesty dressing by mixing olive oil, lemon juice, salt, pepper, and basil. Now, time to build your edible masterpiece! Layer those gorgeous heirloom tomatoes, cucumber slices, and crumbled feta in a bowl. Drizzle your dressing over the top - but resist the urge to mix! Serve immediately and watch your guests' eyes light up at this colourful creation. It's a salad that's dressed to impress!

Lemongrass-flavoured rawas

Ingredients 

3 rawas fillets, 1 tsp grated lemongrass, 2-3 kaffir lime leaves, 1/4 onion (sliced), 1 tbsp basil leaves (chopped), 1/3 cup coconut milk, 1 tsp lemon juice, 1 tbsp olive oil, 1 tsp bird's eye chilli (chopped), 1 tbsp coriander leaves for garnish, Salt to taste

Method

Give your rawas a quick salt and pepper massage, then let it chill for a few minutes. Meanwhile, create an aromatic sauce by simmering coconut milk, lemongrass, kaffir lime leaves, basil, and chilli. Your kitchen's about to smell amazing! Gently poach the rawas in this fragrant bath for 9-10 minutes. Once cooked, carefully plate the fish and strain that liquid gold sauce. Garnish with fresh coriander and boom—you've just brought the tropics to your table!
